When someone first walks into our kitchen or writes to us about joining a Saturday workshop, the conversation rarely starts with the menu. It starts with practical concerns: how much time does this take, what if I am not comfortable with a knife, and what exactly happens during a session. Over the months, the same few questions come up again and again, so we decided to answer them here.

The most common question is about skill level. People worry that our bistronomie approach means they need to already know how to break down a chicken or make a proper emulsion. That is not the case. Our market cooking classes are built around what is actually in season that week, and the chef adjusts the techniques to the group. If you have never trimmed an artichoke or roasted a whole fish, that is exactly the kind of thing you will learn, step by step, without being rushed.

The second question is about the menu itself. Since our carte changes weekly based on what local producers bring in, some guests ask whether they can request a specific dish or dietary preference. The short answer is yes, within reason. If you are joining a dinner in the vaulted room, let us know about allergies or strong dislikes when you book. For the workshops, we publish the vegetable focus a few days ahead, so you can decide if that week's basket appeals to you.

Another frequent concern is timing. A Saturday morning atelier runs about two and a half hours, including a shared tasting at the end. Business lunches are designed to fit a standard working hour, with a set menu that moves quickly. Private dinners are more flexible, and we usually plan those together by email before confirming the date.

Finally, people ask about waste. Our zero-waste approach is not a marketing line; it is how we cook. Vegetable peels go into stocks, herb stems become seasoning, and leftover bread turns into crumbs for the next day's dish. When you leave a workshop, you take home not just the food you prepared, but also the habit of using every part of the ingredient.
